2015 – 2017
Cooking as a sous chef at Red Fork Deli in Indiranagar Bangalore was one of the best experiences to create and learn about new food, technique and customer trends. Run by Chef Xerxes Bodhanwala, his wife Sneha and Mum, Zarine Kharas it was a perfect blend of old and new.
This restaurant evolved from Zarine’s earlier Parsi restaurant Daddy’s Deli and continued to tell stories and keep the history of delicious Parsi food alive.
Chef Xerxes bought to the table a contemporary fare, seeking out the best ingredients in and around Bangalore and putting up on the blackboard menu everything delicious we tried and tested out.
It was a learning, evolving and a close-knit kitchen team. Always teaching sharing and trying to be more engaged food citizens.
